Elderflower Rose Marshmallow Empanadas

The other day my boyfriend and I hosted over some of our friends. Since he and I are both originally from TX, we wanted to give them a little taste of the south. We made steak and chicken empanadas and homemade salsa. They were incredible! I was craving empanadas so much that I suggested we make dessert ones as well! Using these incredibly delicious marshmallows from XOMarshmallow we created a marshmallow and chocolate empanada. Click read more for the full recipe!

What you will need:

- Biscuit dough
- Marshmallows (we used 3 flavors - elderflower rose, brandied cherry, and raspberry)
- Semi sweet baking chocolate
- Cooking oil


Step 1: We took a can of biscuit dough and rolled out each individual biscuit into little saucers. You want them to be big enough that you can fill them and fold them over.

Step 2: Fill with semi sweet baking chocolate pieces. Add one marshmallow.


Step 3: Fold over the dough to create a triangular pocket. Pinch sides to seal. If you want a true empanada look (fan like edges) use pizza dough instead and use a fork to mash the edges.

Step 4: Fry in the oil on medium/high until sides are golden brown.


Step 5: Enjoy these ooey gooey delicious treats!
